  • ½ head cauliflower, chopped into small florets

  • 2–3 carrots, sliced

  • 1 small yellow onion, diced

  • 3 cloves garlic, minced

  • 4 cups kale, chopped

  • 6 cups chicken bone broth

  • 1 tbsp olive or avocado oil

  • 1 tsp Italian seasoning

  • ½ tsp dried thyme

  • ½ tsp smoked paprika

  • Salt + black pepper to taste

  • Optional: squeeze of fresh lemon

Instructions

  1. Heat the oil in a large pot. Add the sausage and cook until browned, breaking it into bite-sized pieces.

  2. Add the onion, carrots and garlic. Sauté for 3–4 minutes.

  3. Add the sweet potato, cauliflower, Italian seasoning, thyme, paprika, salt and pepper.

  4. Pour in the bone broth and bring to a boil.

  5. Reduce to a simmer, cover and cook for 15–20 minutes, or until the sweet potatoes and carrots are tender.

  6. Stir in the kale and cook another 3–5 minutes until wilted.

  7. Taste and adjust seasonings. Finish with a squeeze of lemon if you want a little brightness.

For extra protein: Use a full pound of sausage plus a higher-protein bone broth. You could also add white beans for extra protein and fiber.
